Cooking Chronicles: The Morning I Didn’t Want to Cook—but Had To

Let me tell you what happened. My son had friends over, and the house was unusually quiet. Why? Because they were all still asleep—a full tribe of teenage boys, plus me, the only adult up, tired, and nursing a second cup of coffee in my robe. That’s when I decided a pancake tray bake would be perfect for breakfast.

I wasn’t feeling like Supermom. I was feeling like Lazy-Mom-Who-Still-Needs-to-Feed-the-People. You know the one. I couldn’t exactly shout upstairs, “Hey, do y’all want cinnamon pancakes or chocolate chip?” So I had to get creative—and fast. That’s when I decided to throw together what I now call my Customizable Pancake Tray Bake.

I poured one batter into a single pan, split it into flavor zones, and baked it up like the brunch bar of dreams.

🥞 What Is a Customizable Pancake Tray Bake?

Pancake tray bake showing four flavor variations

It’s exactly what it sounds like: a fluffy, oven-baked sour cream pancake sheet that you can top however you like—in sections, swirls, or full-pan flavors. Think of it like a “pancake board” baked into one pan.

You can:

  • Keep one section plain for the syrup lovers.
  • Add cinnamon sugar to another for those cozy fall flavors.
  • Swirl in homemade caramel for gooey goodness.
  • Sprinkle chocolate chips on one corner for the sweet-tooths.

This bake was born out of necessity—but I promise, it’s staying because it’s brilliant.

👩🏽‍🍳 Ingredients You’ll Need For A Pancake Tray Bake

The batter itself is soft and flavorful thanks to sour cream, and it gets an extra rich, nostalgic taste from butter-flavored shortening. You can substitute real butter if that’s more your thing.

✨ Affiliate Note: I used my favorite Asety Chef Knife for prep and my go-to T-fal Ingenio pans for other sides like bacon and eggs (this post contains affiliate links).

🍴 Topping Suggestions For A Pancake Tray Bake

Let your toppings reflect your crowd—or your mood. For this batch, I did:

  • Brown sugar + cinnamon
  • Homemade caramel swirl
  • Chocolate chips
  • Plain (so they can dress it up themselves)

Other ideas for future mornings:

  • Banana slices and nut butter
  • Blueberries with a touch of lemon zest
  • Swirled jam or Nutella
  • Streusel crumble topping

This customizable pancake tray bake is now my go-to when I’m short on time and long on hungry mouths.

Storage & Reheat Tips For Your Pancake Tray Bake

  • Store in the fridge up to 3 days
  • Reheat slices in a toaster oven or microwave
  • Plain and chocolate chip versions freeze well
  • Avoid freezing caramel swirl unless individually wrapped and frozen flat

💡 Mom Hack of the Day

Don’t have time to ask what everyone wants? Don’t.

This tray lets you bake four flavors in one go—and no one has to know you made it up on the fly while praying the caramel didn’t burn.

  • Caramel Swirl: Use dollops of homemade or store-bought caramel and swirl lightly with a knife.
  • Chocolate Chips: Sprinkle 3–4 tbsp semi-sweet chips across a section of the batter.
  • Fruit: Add thin banana slices, blueberries, or strawberries.
  • Jam or Nutella Swirl: Spoon a little on top and swirl for a fruity or chocolatey ribbon.
