My Instant Pot Black Beans Exist Mostly Because I’m Impatient

I have only ever truly come to love the taste of good black beans after eating at a very popular restaurant in South Florida called Pollo Tropical. Now, I have opened and seasoned with great passion many cans of beans, and they NEVER taste as good as just making them from dried. And thats not just the humble black bean. Being a proud Jamaican I can say this about many beans.
Even the beans in Jamaican Rice and Peas tastes better when you start with a bag of dried beans versus a can. The problem is, I’m not the person to think of leavig my bag of beans out soaking overnight. Usually, I dont realize I want my fix of black beans and rice until I’m standing in the kitchen ready to make it. I get the best Black beans When I started using my instant pot to cut out the overnight soaking step. Doing this, I still get tender, flavorful black beans in one pot. I season them with adobo, thyme, smoked paprika, and a touch of onion and garlic — simple, bold, and perfect.
And honestly? These Instant Pot black beans taste even better the next day.

How to Make No Soak Instant Pot Black Beans
Time needed: 1 hour and 15 minutes
When it comes to no soak black beans in the Instant Pot, the magic is all in the flavor base.
- Saute Aromatics
Start by sautéing your onions and garlic right in the pot — this is your flavor foundation. Once the aromatics are fragrant, stir in smoked paprika, adobo seasoning, thyme, and cumin. Blooming the spices helps release their oils and intensify flavor.
- Add the Beans; Flavor the Broth
Next, add your rinsed dried beans and 3 cups of broth, or water. Here’s my favorite tip: taste the bean broth (or water) before sealing the lid. If you’re using water, start with 1 teaspoon of salt; if you’re using broth, use ½ to 1 teaspoon depending on saltiness. The liquid should taste like a light soup — that’s how you know the beans will come out flavorful.
- Cook the Beans
Seal the lid and cook on High Pressure for 55 minutes, then let it naturally release for 15 minutes. When you open the lid, stir, taste, and adjust the seasoning. If you like creamier beans, mash a few with your spoon and simmer for 3–5 minutes on Sauté.
- Enjoy
