A buttery, cheesy, toasted ham-and-cheese sandwich taken to a whole new level with béchamel sauce, crispy bacon, and broiled to perfection.

Ingredients

  • For the Sandwich
  • 2 slices brioche bread (or white bread)

  • 2 slices American bacon, cooked to your liking

  • 3 slices Canadian bacon or ham

  • 2 tablespoons butter, for the bread

  • 2 tablespoons shredded cheese (pizza blend, mild cheddar, or mozzarella)

  • Extra cheese for topping

  • For the Béchamel Sauce
  • butter (plus bacon bits and residual fat)

  • 1 tablespoon all-purpose flour

  • 1 cup milk, plus more as needed

  • 1 tablespoon cream cheese (optional)

  • 2 tablespoon shredded cheddar cheese

  • 1 tablespoon Parmesan

  • Salt, to taste

  • Optional: pinch of nutmeg

Directions

  • Render the bacon: In a skillet, cook American bacon slowly over low heat to render fat and get it nice and crisp. Pour off most of the fat, leaving just the bacon bits and a touch of grease in the pan.
  • Make the béchamel: Add ½ tbsp butter to the bacon pan. Whisk in 1 tablespoon of flour and cook until lightly golden. Slowly pour in cup of milk, whisking constantly to thicken.
  • Add: tbsp cream cheese and shredded cheddar cheese
  • tbsp Parmesan. Season with salt and optional nutmeg. (If too thick, thin with a little milk. Set aside.)
  • Toast the bread: Butter both sides of your brioche or white bread. Toast on your Blackstone griddle (low heat) until golden on each side.
  • Heat the Canadian bacon or ham: Warm the Canadian bacon/ham slices on the griddle just until slightly browned.
  • Assemble the sandwich: On one toasted slice, layer: a spoonful of béchamel, Canadian bacon or ham, American bacon sprinkle of shredded cheese, and a bit more béchamel. Top with the second slice of toasted bread. Spoon béchamel over the top slice and sprinkle on extra shredded cheese.
  • Broil it: Place the sandwich on a baking sheet. Broil for 1–2 minutes, just until the cheese is bubbly and golden.
