  • 1/2 cup old-fashioned rolled oats

  • 1/2 cup milk of choice

  • 1 tablespoon vanilla Greek yogurt

  • 1 tablespoon plain Greek yogurt

  • 1/4 Honeycrisp apple, finely chopped

  • 1 tablespoon light brown sugar

  • 1/4 teaspoon ground cinnamon

  • 1/8 teaspoon vanilla extract

  • Small pinch of salt

  • Streusel Topping
  • 2 tablespoons quick or rolled oats

  • 1/2 tablespoon light brown sugar

  • 1/2 tablespoon all-purpose or almond flour

  • 1/2 tablespoon melted ghee or butter

  • 1/8 teaspoon cinnamon

  • Optional: tiny pinch of nutmeg or cloves

Directions

  • In a mason jar or small container, stir together oats, milk, vanilla and plain Greek yogurts, chopped apple, brown sugar, cinnamon, vanilla extract, and salt. Mix well until combined.
  • Cover and refrigerate overnight or for at least 6 hours.
  • To make the streusel, combine oats, brown sugar, flour, and cinnamon in a small bowl. Add melted ghee or butter and stir until crumbly. Toast in a dry skillet over low heat for 3–5 minutes or bake at 350°F for 5–7 minutes until golden. Let cool.
  • In the morning, top the chilled oats with streusel. Add fresh apple slices if desired. Serve cold or microwave for 30–45 seconds for a warm version.

  • You can totally use all Vanilla yogurt or all plain yogurt but the combination of both is what takes this recipe from okay to YUMAZING!!
