  • 1 whole rotisserie chicken, de-boned (leg, thigh, and breast meat – about 2.5 to 3 cups)

  • 2 quarts chicken broth

  • 2 large carrots, peeled and sliced

  • 2 – 3 stalks celery, sliced

  • 1/2 tsp Adobo seasoning

  • 1/2 tsp paprika

  • 1/4 tsp turmeric (optional, but adds color and flavor)

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • 1/2 tsp dried oregano

  • 1/2 tsp dried thyme

  • Salt and black pepper, to taste

  • 1 package wide egg noodles (about 10–12 oz)

  • 1 – 2 medium russet potatoes, peeled and diced (optional)

  • Fresh parsley for garnish (optional)

Directions

  • Prep the Chicken: Remove the skin and bones from the rotisserie chicken. Shred or tear the meat into bite-sized chunks and place it in the bottom of your slow cooker.
  • Add the Veggies and Broth: Layer in the carrots and celery. If using potatoes, add them here as well. Pour in the chicken broth and give everything a gentle stir.
  • Season It Up: Add Adobo, paprika, turmeric (if using), garlic powder, onion powder, oregano, thyme, and a pinch of salt and pepper. Stir well to combine.
  • Let It Simmer: Cover and cook on low for 6–8 hours or high for 3–4 hours, until vegetables are tender and the broth is rich with flavor. The chicken will break down even more into the soup as it simmers.
  • Near the end of cooking, boil the egg noodles in a separate pot according to package directions. Drain and set aside.
  • Finish and Serve: Just before serving, stir the noodles into the slow cooker. Taste and adjust seasoning if needed. Serve hot, garnished with fresh parsley if you like.
